Deeply sweet, and aromatic Yirga Cheffe, honey to raw sugar sweetness, accents of rue herbals, fruited green tea, perfumed floral jasmine, lemon water-like flavor note and acidity, and a complex, sweet finish. Nothing short of incredible! City to City+.

Impressive sweetness, demerara sugar, cream soda, mild fruited accents of nectarine and lemon, and a touch of clove in aroma. Peach-like acidity helps build out the fruited impressions. City to Full City.
CUPPING NOTES
Delicious and somewhat delicate, this wet-processed lot from Hambela packs impressive sweetness and body, with top notes that are mildly present. The dry fragrance has raw sugar complexity, a note of vanilla, five spice and muted hints of dried fruits. The wetted grounds of City roasts extend an aroma that is peach-like, along with some of that vanilla, a creamy sweetness that lends to a flavor that recalls peaches and cream. City and City+ roasts produce layers of sweetness that when peeled back reveal raw sugars as well as pectin-type, fruited flavors as it cools. In the hot cup, the sweet flavors are like demurara sugar (unrefined cane sugar with molasses intact) and cream soda, along with a subtle bittering coffee tone underneath and dried stone fruit hint accenting the finish. As the coffee cools down some, I pick up on more specific flavor notes like nectarine, lemon squares, clove in the aroma and acidic impression that's a lot like peach. I don't want to over promise here with the fruit. For me, all these characteristics are present, but in smaller amount (other than sweetness) than some of our more overtly fruited, washed Ethiopias. But anice fruited quality does manage to come through and is well integrated into the coffee's sweetness.

Remember our 2018 Ethiopia dry process "Hambela Hassan" coffee? This is from the same station owner, Kedir Hassan, the older sibling to Esmael Hassan, who you may remember as the producer of another Guji coffee we've also carried, Kayon Mountain. "Dabaye" is the name of the kebele where this Hambela station is located (a town, more or less). We were lucky enough to be hosted at this station on our December 2018 visit, camping out in a pair of military tents replete with cots, overlooking the couple hundred drying tables below us. Kedir is an incredibly proficient and capable engineer as well as coffee farmer, and built the entire Hambela station in one season. You wouldn't know this, as it's visually apparent everything was built with high processing standards, and with efficiency in mind. Of course he did not complete Hambela on his own, and thanks to his long standing connection with the people in this area, he had much needed community support. Hambela sits at 1816 meters above sea level, and coffee is grown as high as 2100 meters. They mostly buy coffee from farmers in the surrounding kebeles of Buliye, Wamena, Borticha, Dari Rogicha and Dabaye, of course. This is the wet process lot from the Dabaye station, and we have its dry process counterpart right now as well too - an opportunity to taste the role processing plays on cup profile. Notes of caramel and unrefined sugars build out a sweet base flavor that echos in the finish, with accents of Sencha tea, woody cinnamon sticks, and a subtle dimension of fruit. City to Full City+. Good for espresso.
Rwinyoni is a well-balanced cup that yields mouth pleasing acidity and with sweetness that's intense and complex. Light roasts have a sweet scent honey and caramel, with a delicate splash of brewed black tea. The wet aroma has a nice intensity to it, with a fragrant note of buttery caramel sauce, and cinnamon tea. The cup sweetness is very convincing, even in lighter City roasts where there's often a tradeoff of well developed sweetness for acidity. That is not the case with Rwinyoni, and tasty flavor profiles of caramel, unrefined sugars work to build out the sweet base coffee flavor profile and ultimately leads to a rounded, sweet finish. On top of all that, subtle accent notes fill out the cup flavors with accents of Sencha black tea, and woody cinnamon sticks. Full City roasts brew a cup with more body, and substantial roast tones outline profiles of chocolate and caramel confections, like a caramel filled dark chocolate bar. There's also a dimension of dark fruit at Full City/FC+ that was missing at City. Nothing over the top, but rather, a subtle grape accent note behind the dark chocolate. There's no doubt in my mind that Full City and Full City+ roasts will make delectable espresso.

The coffee is bright juicy, with a syrupy body.
Hints of sugar cane are followed by aromatic hints of Earl Grey, floral fruits, vibrant flavors of green grape, orange, and cranberry. City to Full City.
The sweetness is so potent in the wet aromatics, and along with tropical fruit hints, brought out a profile of pineapple upside-down cake. Running my spoon through the wet coffee crust at the top of my cup released brighter, more delicate citrus notes that smelled amazing. The cup is bright and juicy, with fruits that hit on floral aspects, and syrupy body to boot. Cupping a City roast, the sweetness showed hints of minimally processed sugars, and the fruits came up right behind them. The hot coffee is brisk, and bright, and while vibrant citrus and tea are what came to mind, it wasn't until the coffee cooled off a little that I started to get a clearer picture of flavors. The cup was very aromatic, with hints of Earl Grey and floral stone fruits adding to that effect. Bright flavors of green grape, orange, and cranberry were also such a delicious part of the flavor profile. While I prefered City roasts, Igutha produces quite an enjoyable cup at Full City too. I wouldn't call it "bittersweet", though the roast tones were certainly there. It's the fruits that I was focused on, dark, and juicy grapes, black plum, still bringing some vibrance to the brew.
